St. Patrick’s day is so fun because everything is green! Seriously, today at school all of my kiddies were dressed to the nines in green wigs, green make up, green necklaces, all green clothing… I think you get the picture. That is one of the great perks of being a teacher; you get to be a kid yourself! I am ashamed to say that I only wore a green shirt, but there was enough green at my school to go around for the entire city of Chicago!
Another fun thing about St. Patty’s day is all the green food. One green food I haven’t tried, but am going to tonight, is green beer. I hope it lives up to the hype! One of my most favorite foods that have green in it is a family favorite. My auntie Joyce would make these all the time. Probably because we begged and begged her for them every time we would visit. I’m talking about none other than the amazing chocolate mint brownie! YUM!
I have probably eaten a ton of these brownies in my lifetime and I never get sick of them. The classic combination of chocolate and mint are a winner…guess that’s why they are a classic. My auntie Joy makes THE BEST chocolate mint brownies. The brownie layer is so moist but cakey enough that your not eating raw dough, and the minty middle filling is the prettiest green color with the right amount of mint, and the chocolate ganache on top…. Need I say more??
These are great to make for any get together, and I promise you if you make them, people will beg you for the recipe. They will probably tell you that for all other future events, that chocolate mint brownies are the only thing that you are allowed to bring. They are that good. Trust me. I am an expert brownie eater, and these take the cake. I don’t know if its one ingredient that makes these so special, but when you combine all three layers together, it is sweet chocolaty heaven. I can’t really believe I am going to share the recipe because well… it has been part of the family for so long. But I am a big believer in sharing good things with good people so I hope you make these brownies soon and tell me just how amazing they are!
Chocolate Mint Brownies
Recipe from my Auntie Joy
1/2 cup butter
1 cup sugar
1 t vanilla
1 1/2 cups Hershey’s syrup
1 cup flour
-Combine ingredients in the listed order. Mix well and bake at 350 25 – 30 minutes (watch closely, may take up to 45 minutes depending on oven, elevation, etc). A 9×9 pan works well for thick brownies.
1/2 cup butter
2 cup powdered sugar
1 T Milk
2 T of Creme de Menthe
-Again, combine ingredients in listed order and beat with electric mixer until light and fluffy. Frost brownies after they have cooled completely.
Top Chocolate Layer:
6 T butter
1 1/2 cup semi sweet chocolate chips
-Melt butter and chocolate chips together in a double broiler or in microwave, stirring frequently. Once smoothly melted and combined, pour over the mint-frosted-brownies and allow at least one hour to set.
* For those of you with sensitive stomachs to dairy, you can make the frostings with shortening instead of butter*
