As a kid I always wanted my mom to make me these ice cream cone cupcakes for my birthday. Well I finally made them… when I turned 25! These are so fun to make and you can really get creative when decorating. I would say these are even easier to make than traditional cupcakes because you don’t have to fool around with silly wrappers.
I found this recipe on the Betty Crocker website, good old’ Betty. Now I know there are some of you who are probably shaking your head at me… Paige how can you consider yourself a baker if you bake from a box?! Well folks, Betty makes a mean cake mix and you can always make it taste home made with a few changes. I always add milk instead of water; sometimes I even add buttermilk to chocolate mixes. You can add sour cream or yogurt for extra richness too. With yellow or white cake mixes I like to add applesauce instead of oil, just to lighten things up so I can have that extra piece of cake. The combinations of flavors are endless and you can always find ways to make the cake your own.
When I brought these in for my class the kids went wild! They were totally impressed with me, which made my entire birthday amazing. The cupcakes were fun to make and I added a surprise in the middle, part of an Oreo cookie! Next time I make these I will add more batter than what the recipe calls for. My cupcakes came out a little flat and by adding more batter I will get more of the scooped look that makes these cupcakes so endearing. I hope you make these, they are so fun and perfect for summer!
